Spinach and cheese muffins

My client asked me if I could have a look at the recipe for Spinach and cheese muffins (see the recipe below) and how I would remake it to be lighter. (she found it a little bit heavy). So I did.


Try 1 I replaced butter with avocado, regular flour with ground porridge, regular milk with almond unsweetened milk, vegetable stock cube with organic vegetable bouillon (Dr. Coys) and I added 1 Tbsp. baking powder.

Result: It was ok but for my taste not good enough. Simply too much flour. My daughter did not like it at all. My partner liked it a lot.


Try 2 I replaced butter with olive oil, regular flour with 4 medium size potatoes (grated) and 4 Tbsp.ground porridge, regular milk and vegetable stock as mentioned above in Try 1. I added 1/2 Tbsp.baking powder.

Result: We all liked them more then the first version. Actually my partner liked them a lot again. My daughter ate them but it would not be her favorite meal.


Try 3 - now it is already completely different recipe 😅🙈 4 medium size potatoes (grated), 3 eggs, 3 gloves garlic (crushed), salt, pepper, 100 g grated Cheddar cheese, 3 Tbsp. unsweetened almond milk, 75 g fresh baby spinach, chopped, 4 - 5 Tbsp. ground porridge, 1/2 Tbsp.baking powder.

Result: We all are happy. I will put this recipe on the list of our regular meals. 😀

...and maybe you will have another ideas how to make the whole family happy with healthy muffins. 😊
